Ingredients for the Citrus Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Put all the items in a pan, bring to a gentle boil, mixing so the sugar melts. Next, remove from the heat allowing it to cool fully. Pour into an sterilised bottle, close it keeping it chilled, it can be stored for up to a month.
To make Batch Mix: Mix every liquid ingredients into one big jug, leave to sit for one hour, then filter it , ideally through cheesecloth, making it perfectly clear.
For serving: Measure 85ml from the cocktail base into a cocktail shaker packed with ice, and agitate lightly for about 60 seconds to chill. Pour to a cold coupe glass or similar, garnish with some cranberries adding the final touch with a light spray of the essential oil over the drink.
